  • 1/2 cup all-purpose flour
  • 1/2 cup amaranth powder or quinoa powder

  1. In a medium bowl, combine the flour, amaranth or quinoa powder, baking powder, and salt. Stir until well mixed and the dry ingredients are evenly combined.
  2. In a separate bowl, whisk together the mashed banana, milk, eggs, honey, and acai berry powder until well combined and the mixture is smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined and the batter is thick and lumpy.
  4. Add your favorite mix-ins, such as chopped nuts, seeds, dried fruit, or chocolate chips, and stir until well mixed.
  5. Heat a large non-stick skillet or griddle over medium-high heat and grease it with a small amount of butter or oil.
  6. Drop the batter by 1/4 cupfuls onto the hot skillet and cook the pancakes for about 2-3 minutes, or until bubbles form on the surface and the edges are golden brown.
  7. Flip the pancakes and cook them for another 2-3 minutes, or until they are cooked through and the bottoms are golden brown.
  8. Transfer the pancakes to a plate and keep them warm while you cook the remaining batter.
