  • 1 cup amaranth flour
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup sugar
  • 1/4 cup cacao powder
  • 3 mashed bananas
  • 1 tablespoon banana powder
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 egg, beaten
  • 1 tsp. vanilla extract


  1. Preheat your oven to 350°F and grease a 9x5 inch loaf pan with cooking spray.
  2. In a small mixing bowl, combine the amaranth flour, all-purpose flour, baking powder, baking soda, salt, sugar, banana powder and cacao powder. Mix well until the ingredients are well combined and a smooth and homogenous flour mixture forms.
  3. In a separate large mixing bowl, combine the mashed bananas, milk, oil, egg, and vanilla extract. Mix well until the ingredients are well combined and a smooth and homogenous batter forms.
  4. Add the dry ingredients to the wet ingredients and mix well until they are fully incorporated and a thick and sticky batter forms.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake the bread for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
