Ingredients

  • 1/2 cup chopped mixed nuts (almonds, walnuts, pecans, etc.)
  • 1/2 cup chopped cacao nuts
  • 2/3 cup all-purpose flour
  • 1/3 cup quinoa powder
  • 1/2 cup sugar
  • 1/4 cup cacao powder
  • 1/4 cup cacao nibs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk of your choice
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the chopped nuts, flour, sugar, cacao powder, cacao nibs, baking powder, quinoa powder and salt. Stir until well combined and the dry ingredients are evenly mixed.
  3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined and the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined and the batter is thick and lumpy.
  5. Divide the batter evenly among the muffin cups, filling them about 3/4 full.
  6. Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the muffins from the oven and let them cool in the tin for about 5 minutes.
  8. Transfer the muffins to a wire rack and let them cool completely before serving.
