These maca energy balls are a delicious and nutritious snack that will give you the pick-me-up you need! Ingredients

  • 1 cup pitted dates
  • 1/4 cup almonds
  • 1/4 cup chopped cacao nuts
  • 1/2 cup rolled oats or quinoa flakes
  • 1 tablespoon maca powder
  • 1 tablespoon melted coconut oil
  • 1/2 teaspoon vanilla extract

Directions

  1. In a food processor, combine the dates, almonds, cacao nuts, oats/flakes, and maca powder. Process until the ingredients are well combined and form a sticky dough.
  2. Add the coconut oil and vanilla extract and process again until well combined.
  3. Scoop out tablespoon-sized balls of the dough and roll them between your hands to form balls.
  4. Place the balls on a plate or tray and chill in the fridge for at least 30 minutes to firm up.
  5. Enjoy your delicious and healthy maca energy balls!

This recipe makes about 12 energy balls. You can adjust the ingredients to your liking and add more or less of each ingredient to suit your taste. Maca powder has a unique, slightly nutty flavor, so it goes well with the dates, almonds, and oats in these energy balls.
