  • 1 cup goji berries
  • 1/2 cup orange juice
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 2 eggs
  • 1 tablespoon orange zest


  1. Preheat your oven to 350°F and grease a 9-inch cake pan.
  2. In a small saucepan, combine the goji berries and orange juice. Cook over medium heat until the berries have softened and released their juices, about 5-7 minutes.
  3. Using a potato masher or a fork, mash the berries to break them up and release more of their juices.
  4. In a large mixing bowl, beat the eggs until they are light and fluffy. Add the honey, orange zest, and almond flour and mix until well combined.
  5. Stir in the mashed goji berries and orange juice mixture until well combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake the cake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
