Ingredients

  • 1 cup goji berries
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup pistachios, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup coconut milk

Directions

  1. In a small saucepan, combine the goji berries and lemon juice. Cook over medium heat until the berries have softened and released their juices, about 5-7 minutes.

  4. Spoon the mixture into the tart shells and smooth the top with a spatula.
  5. Chill the tarts in the refrigerator for at least 1 hour, or until firm.
