  • 1 cup goji berries
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup pistachios, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup coconut milk
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract

  1. In a small saucepan, combine the goji berries and lemon juice. Cook over medium heat until the berries have softened and released their juices, about 5-7 minutes.
  2. Using a potato masher or a fork, mash the berries to break them up and release more of their juices.
  3. In a small mixing bowl, combine the mashed berries, strawberries, pistachios, coconut milk, honey, and vanilla extract. Mix well until the ingredients are well combined.
  4. Spoon the mixture into the tart shells and smooth the top with a spatula.
  5. Chill the tarts in the refrigerator for at least 1 hour, or until firm.
  6. Once firm, serve the tarts as a tasty and healthy dessert.

These strawberry goji tarts are a delicious and healthy dessert that you can enjoy anytime. The goji berries and strawberries add a sweet and fruity flavor to the tarts, while the pistachios add a crunchy and nutty texture.
